
Bacillus Subtilis DE111 Polyphenol Probiotic Drink
A polyphenol-rich probiotic juice made with cold-pressed fruit and fermented with Bacillus subtilis DE111, a clinically studied spore-forming probiotic strain. This 72-hour controlled fermentation supports microbiome balance and functional gut ecology.
Equipment
- (1000-1200 mL capacity) Glass jar
- 1 Cold press juicer (preferred) or blender + strainer
- 1 Large pot (for hot water bath)
- 1 Kitchen thermometer
- 1 Alcohol wipes or food-grade sanitizer
- 1 Non-metal spoon (sterilized)
- 1 Incubator / Sous vide / Yogurt maker / Warm oven (37°C setting)
Ingredients
- 2 capsules Bacillus subtilis DE111 (approx. 10 billion CFU)
- 3 pomegranates, 3 dragon fruits (pink preferred)/ 2 kiwi fruits, 10 strawberries (Can choose any two Polyphenol rich fruits. Cold press to yield 750–800 mL juice)
- 2 tsp Pectin/Dextrose, GOS, Inulin of each Now food, GOS from Bimuno
Instructions
- Cold press selected fruits to obtain 750–800 mL juice.If using blender, strain pulp thoroughly.
- Add pectin/dextrose, GOS, Inulin and mix evenly.
- Place jar in a pot of water. Sous vide is more convenient to use.
- Heat water to 90°C and maintain for 5 minutes.
- Turn off heat and allow juice to cool completely to room temperature (≤37°C).
- Turn off fans/AC and close windows. Wash hands or wear gloves.Wipe counter, jar exterior, and probiotic bottle with alcohol.Allow surfaces to air dry.
- Open 2 capsules of DE111 into cooled juice.
- Stir gently with sterilized stainless steel spoon or shake jar to mix evenly.
- Incubate at 37°C (98°F).Ferment for 72 hours. Can do 60 hours if its very sour.
- After fermentation, seal jar and refrigerate immediately.
- Can be consumed after 3-4 hours of storage, use 2-3 tbsp of this juice as starter to ferment next batch.
Notes
- The final juice will taste mildly tart with light effervescence.
- The product will not thicken like yoghurt.
- Discard if a strong alcoholic smell or visible mould develops.
- Refrigerate and consume within 2 weeks.
