Ingredients
  

For Banana Patties

  • 2 Number Raw Banana (Boiled and Peeled)
  • 2 tsp Chaat Masala
  • Himalayan Pink Salt (As per taste)
  • ½ tsp Green Chilli Paste
  • 1 tsp A2 Organic Ghee

For Green Chutney

  • 1 Cup Cilantro Leaves / Coriander (washed & Chopped)
  • 1-2 Number Green Chilli
  • ½ Cup Tomato (Chopped)
  • ¼ tsp Dry Ginger Powder
  • ¼ tsp Dry Mango Powder
  • ¼ tsp Roasted Cumin Powder
  • 1 tsp Black Salt
  • 2 tbsp Water

For Sweet Chutney

  • ½ Cup Tamarind Pulp
  • ¼ Cup Jaggery Powder
  • ¼ tsp Fennel seeds or Powder

For Garnishing

  • ½ Cup Curd ( Preferably home fermented )
  • ½ Cup Sprouted Moong (Mung Beans)
  • 1 tbsp Onion (Chopped)
  • 1 tbsp Tomato (Chopped)
  • ¼ tsp Chaat Masala
  • ½ tsp Green Coriander
  • ¼ tsp Green Chilli (Fine chopped)

Instructions
 

For Banana Patties

  • Mash All the ingredients together, mix it well.
  • Make small dumplings, and flatten them ( like patties/ tikki ).
  • Brush the patties with Ghee.
  • Heat the Iron pan or any heavy bottom pan, once hot, set the flame low, and place 3-4 patties. Once one side becomes crisp and golden, flip them. (Can be air fried or baked)
  • Cook the patties on each side for 3-4 minutes or till golden brown.
  • Patties are ready.

For Green Chutney

  • Grind all the ingredients and make a fine paste, add little water if needed.
  • Green Chutney is ready.

For Sweet Chutney

  • Boil tamarind pulp, with jaggery and fennel seeds.
  • Keep the flame on Medium, keep stirring till everything dissolved.
  • Let it come to a boil, simmer for 2-3 minutes until the consistency thickens, let it cool completely.
  • Sweet tamarind chutney is ready.

Assembling The Chaat

  • Take a deep dish plate.
  • Place a patty in the center, (You can crumble if you want).
  • Add sprouted moong (mung beans), onion, tomato, curd, green and sweet chutney according to your taste.
  • Sprinkle some chaat masala, coriander leaves, and chilies on it.
  • Enjoy Your high fiber Green Banana Chaat without any guilt.
