Ingredients
  

For Broccoli Rice

  • 1 Cup Broccoli
  • ¾ tbsp Ghee/Coconut Oil/Avocado Oil
  • ¼ Teasp Pepper, ground
  • Salt To taste

For Smoked Tofu With Vegetable Curry

  • 200 gm Smoked Tofu (cubed)
  • ½ cup Carrots
  • ¼ cup Onions
  • ½ cup Pumpkin
  • tbsp Ghee/Coconut Oil
  • ½ cup Coconut milk
  • ¼ tbsp Lime Juice

Instructions
 

For Broccoli Rice

  • Cut the broccoli into small florets and the stalk into small pieces
  • Place in the food processor and blend until it broken up into rice like texture
  • Heat the large size pan, over medium high flame
  • Add Ghee/Oil into the pan
  • Add broccoli rice to the pan and saute it for 3-4 minutes
  • Season with salt and pepper as per taste
  • Stir often for about 5-6 minutes, until the broccoli has softened, bright green and cooked through.
  • Serve hot

For Smoked Tofu and Vegetable Curry

  • Dice the smoked tofu and greese with the oil and stir fry until it becomes crispy
  • Cut the carrot and yellow pumpkin into thin slices, and dice the onions into larger wedges.
  • Mix these cut vegetables to the tofu in the large pan and fry it about 5-6 minutes
  • Add coconut milk into the pan and simmer gently for 15 minutes
  • Season with curry powder
  • Your broccoli-rice, and smoked tofu with vegetable curry is ready to serve

Notes

  • Below are the measuring units used for the recipe, best to use steel, wooden or copper measuring spoons and cups.
       1 Tsp  = 5 grams
       1Tbsp = 15 grams
       1 Cup = 128 grams
  • This recipe can also be made with cauliflower, just replace the broccoli with cauliflower.
  • For smoked tofu with vegetable curry, you can use vegetable of your choice like zucchini, bell pepper, green beans etc.
  • To taste & aroma enhancement, you can add herbs and spices of your choice.
